  • 3/4 cup (150g) granulated sugar
  • 1/4 cup (50g) packed brown sugar
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • 3/4 cup (120g) maraschino cherries, chopped and drained
  • 1 cup (175g) semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 350Β°F (175Β°C). Line two baking sheets with parchment paper.
  2. In a medium bowl, whisk together the flour, baking soda, and salt.
  3. In a large bowl, beat the softened butter with granulated sugar and brown sugar until light and fluffy, about 2-3 minutes.
  4. Beat in the egg and vanilla extract until combined and creamy.
  5. Gradually add the dry ingredients to the wet ingredients, stirring gently just until incorporated.
  6. Fold in the chopped maraschino cherries, ensuring they are well drained and dry.
  7. Drop tablespoon-sized scoops of dough onto the prepared baking sheets about 2 inches apart.
  8. Bake for 10-12 minutes, until edges are lightly golden but centers remain soft.
  9. Let cookies cool on the baking sheet for 5 minutes, then transfer to a cooling rack.
  10. Melt the semi-sweet chocolate chips using a double boiler or microwave in short bursts, stirring frequently.
  11. Dip the bottoms of each cooled cookie into the melted chocolate and place on parchment paper to harden. Refrigerate for 10 minutes if desired.

Notes
