  • 2 cups whole milk (can substitute with 2% or dairy-free milk)
  • 1 cup chicken broth (low-sodium recommended)
  • 1 cup shredded sharp or medium cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1 teaspoon Dijon mustard
  • 1 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • Optional: Fresh parsley or chives for garnish

Instructions

  1. Preheat oven to 375°F (190°C) and grease a 9×13-inch baking dish with butter or non-stick spray.
  2. If using fresh broccoli, steam or blanch florets for 3-4 minutes until just tender but still bright green. Drain well. Skip if using thawed frozen broccoli.
  3. In a large skillet or saucepan, melt butter over medium heat. Stir in flour and cook for 1-2 minutes, whisking constantly until smooth and bubbly (roux).
  4. Slowly whisk in milk and chicken broth, stirring constantly to avoid lumps. Cook and stir until mixture thickens and coats the back of a spoon, about 5-7 minutes.
  5. Add Dijon mustard, onion powder, garlic powder, salt, and pepper. Stir to combine and taste to adjust seasoning.
  6. Remove sauce from heat and stir in shredded cheddar and mozzarella cheese until melted and smooth.
  7. In a large mixing bowl, combine cooked chicken, cooked rice, and broccoli florets. Pour creamy cheese sauce over and fold gently until evenly coated.
  8. Transfer mixture to prepared baking dish and spread evenly. Sprinkle additional 1/2 cup shredded cheddar and mozzarella cheese on top for extra cheesy golden crust.
  9. Bake uncovered for 25-30 minutes until top is bubbly and golden brown.
  10. Let casserole rest for 5-10 minutes before serving to set and make scooping easier.
