  • 2 pounds boneless, skinless chicken breasts
  • 6 slices bacon, cooked and crumbled
  • 8 oz cream cheese, softened
  • 1 packet (about 1 tablespoon) ranch seasoning mix
  • 1 cup shredded cheddar cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Green onions, sliced (optional)

Instructions

  1. Cook 6 slices of bacon until crispy (about 10 minutes in a skillet or oven). Drain on paper towels and crumble once cooled.
  2. In a medium bowl, combine 8 oz softened cream cheese, 1 packet ranch seasoning, 1 teaspoon garlic powder, and 1 teaspoon onion powder. Stir until smooth and well combined.
  3. Pat dry 2 pounds boneless, skinless chicken breasts. Sprinkle salt and pepper evenly on both sides.
  4. Place the chicken breasts in the bottom of your slow cooker. Spread the cream cheese mixture evenly over the chicken, then sprinkle the crumbled bacon on top.
  5. Cover and cook on low for 6-7 hours or on high for 3-4 hours until chicken is tender and easily shredded with a fork. Avoid lifting the lid during cooking.
  6. Once cooked, shred the chicken directly in the crockpot using two forks. Stir well to mix the shredded chicken with the creamy sauce and bacon.
  7. Sprinkle 1 cup shredded cheddar cheese over the shredded chicken and stir gently until melted and combined. Use the warm setting if available to help melt the cheese.
  8. Top with sliced green onions for garnish and serve warm with your choice of sides.
