  • 2 large eggs, room temperature
  • 1 cup (240 ml) buttermilk, room temperature
  • 1 teaspoon vanilla extract
  • 1 ½ tablespoons matcha powder or 1 teaspoon green food coloring
  • 8 ounces (225 grams) cream cheese, softened
  • ½ cup (115 grams) unsalted butter, softened
  • 3 to 3 ½ cups (360420 grams) powdered sugar, sifted
  • 1 teaspoon vanilla extract
  • 2 to 3 tablespoons heavy cream (optional)

Instructions

  1. Preheat your oven to 350°F (177°C). Line two baking sheets with parchment paper or silicone mats.
  2. In a large bowl, sift together the all-purpose flour, cocoa powder, baking soda, baking powder, salt, and matcha powder. Set aside.
  3. In another bowl, beat the softened unsalted butter and granulated sugar with an electric mixer until light and fluffy, about 3-4 minutes.
  4. Beat in the eggs one at a time, followed by the vanilla extract, ensuring each egg is fully incorporated before adding the next.
  5. Gradually add the sifted dry ingredients and buttermilk to the butter mixture, alternating between them, starting and ending with the dry ingredients. Mix until just combined.
  6. Using a cookie scoop or tablespoon, drop rounded mounds about 2 inches apart on the prepared baking sheets.
  7. Bake for 12-14 minutes, or until the tops spring back when lightly pressed.
  8. Remove from oven and let the cakes cool on the sheets for 5 minutes, then transfer to a cooling rack to cool completely.
  9. In a large bowl, beat the softened cream cheese and butter together until smooth and creamy.
  10. Gradually add the powdered sugar, beating on low speed to avoid a sugar cloud, then increase speed until fluffy.
  11. Add vanilla extract and heavy cream if desired to reach preferred consistency.
  12. Pair cakes of similar size, spread or pipe a generous dollop of frosting on the flat side of one cake, then sandwich with its partner.
  13. Press gently to spread the frosting evenly without squishing out the edges.
  14. Optional: Chill the assembled pies in the fridge for 30 minutes before serving to firm up the frosting.
