Creamy Irish Cream Fudge Recipe Easy Homemade Decadent Swirls

A rich and creamy fudge infused with Irish cream liqueur and decorated with decadent dark chocolate swirls. Perfect for gifting, gatherings, or a comforting sweet treat.

  • 2 cups granulated sugar (400 g)
  • 1/2 cup unsalted butter, softened (115 g)
  • 2/3 cup evaporated milk (160 ml)
  • 2 cups white chocolate chips (340 g)
  • 1/3 cup Irish cream liqueur (80 ml)
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • 1/2 cup dark chocolate, chopped (85 g)

Instructions

  1. Line an 8×8-inch baking pan with parchment paper, leaving some overhang on the sides for easy fudge removal. Set aside.
  2. In a heavy-bottomed saucepan, combine granulated sugar, softened unsalted butter, and evaporated milk. Place over medium heat.
  3. Stir constantly until the sugar dissolves completely. Once dissolved, clip in a candy thermometer if using. Boil gently, stirring frequently, until the mixture reaches the soft-ball stage (234Β°F / 112Β°C), about 5-7 minutes. If no thermometer, boil for roughly 6 minutes, watching texture closely.
  4. Remove the pan from heat immediately to prevent burning.
  5. Stir in white chocolate chips until fully melted and the mixture is smooth.
  6. Quickly stir in Irish cream liqueur, vanilla extract, and a pinch of salt.
  7. Transfer about half the fudge to a separate bowl. Stir in the chopped dark chocolate until melted and smooth to create the swirls.
  8. Pour the plain white fudge into the prepared pan first. Then dollop spoonfuls of the dark chocolate fudge over the top.
  9. Use a butter knife or skewer to gently swirl the two fudge mixtures together, creating marbled swirls without overmixing.
  10. Refrigerate for at least 3 hours, or until the fudge is firm to the touch.
  11. Use the parchment overhang to lift fudge out of pan. Cut into 1-inch (2.5 cm) squares. Store leftovers in an airtight container in the fridge.

Notes

Do not rush the boiling step to ensure perfect fudge texture. Swirl the fudge while still warm but not hot to maintain the marbled effect. For dairy-free, substitute evaporated milk with coconut milk and use dairy-free chocolate chips. For kid-friendly, replace Irish cream with cream and almond extract.
