  • 4 boneless, skinless chicken breasts (thinly sliced or pounded for even cooking)
  • Salt and pepper to taste
  • 2 tablespoons olive oil (extra virgin recommended)
  • 2 tablespoons butter
  • 3 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes, chopped (packed in oil, drained slightly)
  • 1 cup low sodium chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning (dried basil, oregano, thyme blend)
  • 1/4 teaspoon red pepper flakes (optional)
  • A handful fresh basil, chopped (for garnish)

Instructions

  1. Pat the chicken breasts dry with paper towels, then season both sides generously with salt and pepper. (5 minutes)
  2. Heat 1 tablespoon olive oil and 1 tablespoon butter in a large skillet over medium-high heat. Add chicken breasts and cook 5-6 minutes per side until golden brown and cooked through. Remove and set aside, tented with foil to keep warm. (Total 10-12 minutes)
  3. Lower heat to medium. Add remaining 1 tablespoon olive oil to the pan. Add minced garlic and chopped sun-dried tomatoes. Cook, stirring often, until garlic is fragrant and tomatoes soften, about 2 minutes.
  4. Pour in chicken broth, scraping up browned bits from the pan. Let simmer for 2-3 minutes to reduce slightly.
  5. Stir in heavy cream, grated Parmesan, Italian seasoning, and red pepper flakes if using. Simmer gently for 3-4 minutes until sauce thickens and coats the back of a spoon. Taste and adjust salt and pepper as needed.
  6. Return chicken breasts to the pan, nestle into the sauce, and spoon sauce over the top. Simmer on low for 3-5 minutes to meld flavors and warm chicken through.
  7. Just before serving, scatter chopped fresh basil over the dish.

Notes

If sauce is too thick, add a splash more broth or cream to loosen. If too thin, simmer gently until desired consistency. Avoid burning garlic by watching closely. For dairy-free, substitute heavy cream with coconut cream and Parmesan with nutritional yeast or omit cheese.
