  • 12 ounces (340g) fettuccine or linguine, broken in half
  • 4 cups (960ml) low sodium chicken broth
  • 1 cup (240ml) heavy cream
  • 3 cloves garlic, minced
  • 3 tablespoons unsalted butter
  • 1 cup (about 100g) freshly grated Parmesan cheese
  • 1 tablespoon olive oil
  • Salt and freshly cracked black pepper, to taste
  • Chopped fresh parsley, for garnish (optional)

Instructions

  1. Prep your ingredients: cut chicken into bite-sized pieces, mince garlic, and grate Parmesan (5 minutes).
  2. Heat olive oil and 1 tablespoon butter in a large deep skillet over medium-high heat. Add chicken, season with salt and pepper, and cook until golden and cooked through, about 6-8 minutes. Remove chicken and set aside.
  3. Reduce heat to medium. Add remaining butter and minced garlic to the pan. Stir gently for about 1 minute until fragrant but not browned.
  4. Pour in chicken broth and heavy cream, bring to a gentle boil. Add broken pasta pieces, pressing them down to submerge. Stir immediately to prevent sticking. Cover with lid and simmer, stirring every 3-4 minutes, for 15-18 minutes until pasta is almost tender.
  5. Return chicken to the pot. Sprinkle in grated Parmesan cheese and stir gently until cheese melts and sauce thickens, about 3 minutes. Add more broth or cream if sauce is too thick.
  6. Taste and adjust seasoning with salt and pepper. Garnish with chopped fresh parsley before serving.
