  • 1/2 cup (110g) packed light brown sugar
  • 2 large eggs, room temperature
  • 1 tsp pure vanilla extract
  • 1 tsp peppermint or mint extract (adjust to taste)
  • 2 1/2 cups (315g) all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • Green food coloring (optional)
  • 1 1/2 cups (270g) semi-sweet chocolate chunks or chips
  • 1/2 cup (85g) chopped Andes mint baking chips or chopped mint chocolate candies

Instructions

  1. Preheat your oven to 350Β°F (175Β°C). Line two baking sheets with parchment paper or silicone mats.
  2. Cream the butter and cream cheese together until smooth and fluffy, about 2-3 minutes.
  3. Beat in granulated sugar and light brown sugar until combined and creamy, about 2 minutes.
  4. Add eggs one at a time, beating well after each. Stir in vanilla extract and peppermint or mint extract. Add green food coloring if using and mix until color is even.
  5. In a separate bowl, whisk together flour, baking soda, and salt.
  6. Gradually add the dry ingredients to the wet mixture, mixing on low speed until just combined. Avoid overmixing.
  7. Fold in semi-sweet chocolate chunks and chopped Andes mint baking chips using a rubber spatula.
  8. Drop rounded spoonfuls of dough about 2 inches apart on prepared baking sheets using a cookie scoop or tablespoon.
  9. Bake for 10-12 minutes until edges are golden but centers remain soft.
  10. Cool on baking sheet for 5 minutes, then transfer to a cooling rack to cool completely.

If dough feels too soft, chill for 15-20 minutes before baking to help cookies hold shape. Use softened butter and cream cheese for best texture.
