  • 16 oz Velveeta cheese, cubed
  • 10 oz canned diced tomatoes with green chilies (e.g., Ro*Tel), undrained
  • 1 cup shredded cheddar cheese
  • 1/2 cup milk (whole or 2%)
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1/2 tsp ground cumin
  • Salt and pepper to taste
  • Optional: 1 small jalapeño, finely chopped

Instructions

  1. Heat a skillet over medium-high heat. Add the ground beef and cook, breaking it up with a spatula, until no longer pink and slightly browned (about 10 minutes). Drain excess grease if needed.
  2. Cube the Velveeta cheese and shred the cheddar cheese if not pre-shredded (about 5 minutes).
  3. Add the browned ground beef, Velveeta cubes, diced tomatoes with green chilies (undrained), shredded cheddar, milk, onion powder, garlic powder, ground cumin, and jalapeño (if using) to the slow cooker. Stir gently to combine.
  4. Cover and cook on low heat for 1 to 1.5 hours, stirring every 20-30 minutes to help the cheese melt evenly and prevent sticking.
  5. Taste the dip and add salt and pepper to your liking. Stir well and transfer to a warm serving dish or keep in the slow cooker on the warm setting.
