Instructions

  1. Prepare the Cream Cheese Filling: In a medium bowl, combine softened cream cheese, 2 tablespoons sugar, and 1 teaspoon vanilla extract. Beat until smooth and creamy (2-3 minutes). Fold in finely chopped strawberries and set aside.
  2. Prep the Bread: Trim crusts off bread slices. Flatten each slice to about 1/4 inch thickness using a rolling pin or hands.
  3. Fill and Roll: Spread about 2 tablespoons of cream cheese and strawberry mixture evenly over each flattened bread slice, leaving a small border. Roll up tightly and pinch edges to seal.
  4. Make the Egg Mixture: In a shallow bowl, whisk together eggs, milk, 1 tablespoon sugar, cinnamon, vanilla, and salt until combined and slightly frothy (1-2 minutes).
  5. Cook the Roll-Ups: Heat a non-stick skillet over medium heat and melt 1 tablespoon butter. Dip each roll-up in egg mixture, coating all sides quickly. Place seam-side down in skillet. Cook 2-3 minutes per side until golden brown. Add more butter between batches as needed.
