  • 1/3 cup sun-dried tomatoes, chopped
  • 1/2 cup grated Parmesan cheese
  • 2 cups fresh baby spinach leaves
  • 1 teaspoon Italian seasoning or dried oregano
  • Red pepper flakes, optional
  • Fresh basil or parsley, chopped (optional garnish)
  • Lemon wedges (optional garnish)
  • Cooked pasta, rice, or low-carb zoodles (optional serving base)

Instructions

  1. Rinse the shrimp under cold water and pat dry with paper towels. Season with smoked paprika, salt, and pepper.
  2. Heat olive oil or butter in a skillet over medium-high heat. Add shrimp in a single layer and cook 2-3 minutes per side until pink and opaque. Remove shrimp and set aside.
  3. Lower heat to medium. Add minced garlic to the same pan and sauté for about 30 seconds until fragrant. Add chopped sun-dried tomatoes and cook for 1 minute.
  4. Pour in heavy cream and broth, stirring to combine. Simmer gently for 3-4 minutes to thicken slightly.
  5. Stir in Parmesan cheese and Italian seasoning until sauce is creamy and coats the back of a spoon.
  6. Add fresh spinach leaves and stir until wilted, about 1-2 minutes.
  7. Return cooked shrimp to the pan and cook for another minute to heat through and meld flavors.
  8. Taste and adjust seasoning with salt, pepper, and optional red pepper flakes.
  9. Serve immediately over pasta, rice, or zoodles. Garnish with fresh basil or parsley and a squeeze of lemon.

Notes

If sauce gets too thick, add a splash of broth or cream to loosen it. Avoid overcooking shrimp to keep them tender. Use frozen spinach if fresh is unavailable, but thaw and drain well. For dairy-free, substitute heavy cream with coconut cream and omit Parmesan or use dairy-free cheese.
