A quick and elegant mimosa recipe featuring chocolate-covered strawberries, combining the fizz of champagne with the rich sweetness of chocolate and fresh strawberries for a memorable celebration drink.

  • 6 ounces (170g) high-quality dark chocolate (60-70% cocoa)
  • 1 bottle (750 ml) chilled champagne or sparkling wine (brut preferred)
  • 1 cup (240 ml) freshly squeezed orange juice
  • Optional garnishes: edible gold flakes or mint leaves

Instructions

  1. Wash and dry strawberries thoroughly to ensure chocolate sticks properly (about 5 minutes).
  2. Melt the dark chocolate in a microwave-safe bowl in 20-second bursts, stirring between each, until smooth and glossy, or melt using a double boiler over simmering water (3-5 minutes).
  3. Dip each strawberry into the melted chocolate, swirling to coat evenly. Let excess chocolate drip off and place on parchment paper or wire rack (about 10 minutes).
  4. Allow chocolate-covered strawberries to set at room temperature for 30 minutes or refrigerate for 15 minutes until chocolate hardens to a crisp shell.
  5. In a pitcher or large measuring cup, combine 1 cup freshly squeezed orange juice with about 3 cups (720 ml) chilled champagne or sparkling wine. Stir gently to combine without losing fizz.
  6. Pour the mimosa mixture into chilled champagne flutes, filling about two-thirds full. Garnish each glass with a chocolate-covered strawberry either dropped into the glass or resting on the rim.
  7. Serve immediately and enjoy fresh for best flavor and fizz.

Notes

Melt chocolate slowly and stir often to avoid seizing. Ensure strawberries are completely dry before dipping. Chill glasses ahead to keep mimosas colder longer. Add sparkling wine last and stir gently to preserve bubbles. Chocolate-covered strawberries are best served fresh to maintain crispness.
