These decadent chocolate truffles combine rich dark chocolate with a touch of sea salt for a luxurious, silky treat that’s quick and easy to make. Perfect for any occasion, they offer a perfect balance of salty and sweet with a creamy texture.

  • 8 oz (225 g) dark chocolate (70% cocoa recommended)
  • 1/2 cup (120 ml) heavy cream
  • 2 tbsp (28 g) unsalted butter, softened
  • Flaky sea salt for sprinkling
  • 1 tsp vanilla extract
  • Cocoa powder for rolling (optional)
  • Optional add-ins: splash of espresso, pinch of chili powder

Instructions

  1. Finely chop 8 oz (225 g) of dark chocolate and place in a heatproof bowl.
  2. In a medium saucepan, combine 1/2 cup (120 ml) heavy cream and 2 tbsp (28 g) unsalted butter. Heat over medium-low until butter melts and mixture starts to simmer around edges, but do not boil.
  3. Pour the hot cream mixture over the chopped chocolate. Let sit for 2 minutes to soften chocolate, then stir gently until smooth and glossy. Add 1 tsp vanilla extract and mix well.
  4. Cover the bowl with plastic wrap and refrigerate for 1-2 hours until firm but pliable.
  5. Using a small spoon or cookie scoop, portion out about 1 tbsp (15 ml) of ganache and quickly roll into smooth balls. If too soft, chill for 10 minutes.
  6. Roll each truffle in cocoa powder or sprinkle with flaky sea salt. For variation, use crushed nuts or shredded coconut.
  7. Place truffles on a parchment-lined baking sheet and refrigerate for 30 minutes to firm up before serving.

Notes

Do not overheat the cream to avoid seizing the chocolate. Chop chocolate finely for smooth ganache. Chill ganache until firm but not rock-hard for easy rolling. Roll quickly or chill hands between batches to prevent melting. Use a double boiler for better control when melting chocolate. Flavors deepen after a day or two in the fridge. Store truffles in an airtight container in the refrigerator for up to 1 week or freeze for up to 3 months.
