Instructions

  1. Pour lukewarm milk into a large mixing bowl. Sprinkle in yeast and granulated sugar. Let sit for 5 minutes until foamy.
  2. Add melted butter, salt, and egg to the yeast mixture. Stir to combine.
  3. Gradually add flour, mixing until a shaggy dough forms. Knead for 6-8 minutes until smooth and elastic.
  4. Cover bowl and let dough rise in a warm spot for 1 hour, or until doubled.
  5. Mix softened butter, brown sugar, cinnamon, and a pinch of salt for the filling.
  6. Punch down dough and turn onto a floured surface. Roll out to a 16×10-inch rectangle.
  7. Spread cinnamon filling evenly over dough. Roll up tightly from the long edge to make a log.
  8. Slice log into 12 equal pieces. Shape each roll into a bunny by pinching the bottom for a chin and adding dough scraps for ears.
  9. Decorate with mini chocolate chips for eyes, sliced almonds for teeth/whiskers, and pink sprinkles or jam for noses.
  10. Arrange shaped rolls on a parchment-lined baking sheet. Cover loosely and let rise for 30 minutes while oven preheats to 350°F.
  11. Bake for 20-22 minutes, until golden and fluffy. Cover ears with foil if browning too quickly.
  12. Beat cream cheese, powdered sugar, milk, vanilla, and salt until smooth and pourable.
  13. Drizzle glaze over warm rolls and finish with extra decorations if desired. Let cool for 10 minutes before serving.
