Ingredients

Scale
  • 4 cups fresh or frozen blueberries
  • 3/4 cup granulated sugar (adjust to taste)
  • 1/4 cup all-purpose flour (for filling)
  • 1 tablespoon fresh lemon juice
  • 1/2 teaspoon ground cinnamon (optional)
  • Pinch of salt (for filling)
  • 2 cups all-purpose flour (for biscuit topping)
  • 1 tablespoon baking powder
  • 2 tablespoons sugar (for biscuit topping)
  • 1/2 teaspoon salt (for biscuit topping)
  • 1/2 cup (1 stick) unsalted butter, cold and cubed
  • 3/4 cup cold buttermilk (or 3/4 cup milk mixed with 1 tablespoon vinegar or lemon juice)

Instructions

  1. Preheat your oven to 375°F (190°C). Grease a 9×9-inch baking dish lightly with butter or non-stick spray.
  2. In a large bowl, combine blueberries, 3/4 cup sugar, 1/4 cup flour, lemon juice, cinnamon, and a pinch of salt. Toss gently until evenly coated.
  3. Transfer the filling to the baking dish and spread evenly.
  4. In a separate bowl, whisk together 2 cups flour, baking powder, sugar, and salt.
  5. Add cold, cubed butter to the flour mixture. Cut the butter into the flour using a pastry cutter or two forks until the mixture resembles coarse crumbs with pea-sized bits of butter.
  6. Pour in cold buttermilk and stir gently with a wooden spoon until the dough just comes together. Do not overmix.
  7. Drop biscuit dough by spoonfuls evenly over the blueberry filling, allowing small gaps.
  8. Bake for 35 to 40 minutes until the biscuit topping is golden brown and the filling is bubbling. Tent with foil if topping browns too quickly.
  9. Let the cobbler cool for at least 15 minutes on a cooling rack before serving.

Notes

Keep butter cold until last minute to ensure flaky biscuit topping. Do not overmix biscuit dough to avoid tough topping. Use fresh lemon juice for best flavor. If topping browns too quickly, tent with foil halfway through baking. Let cobbler cool before serving to thicken filling.
