A comforting and easy breakfast casserole featuring crispy tater tots, melted cheese, and savory breakfast sausage, perfect for busy mornings or brunch gatherings.

  • 32 oz (900 g) tater tots
  • 1 lb (450 g) breakfast sausage, ground
  • 8 large eggs, room temperature
  • 2 cups (200 g) shredded cheddar cheese
  • 1 cup (240 ml) whole milk
  • 4 oz (115 g) cream cheese, softened
  • 1 tsp onion powder
  • 1/2 tsp garlic powder
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp fresh chives or parsley, chopped (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Heat a large skillet over medium heat and crumble in the breakfast sausage. Cook for 6–8 minutes, stirring occasionally, until browned and cooked through. Drain excess grease and set aside.
  3. In a large bowl, whisk together eggs, milk, softened cream cheese, onion powder, garlic powder, salt, and black pepper until smooth and creamy, about 2 minutes.
  4. Spread half of the tater tots evenly in the bottom of a 9×13-inch baking dish.
  5. Sprinkle the cooked sausage evenly over the tater tots.
  6. Pour half of the egg mixture over the sausage and tater tots, allowing it to seep through.
  7. Sprinkle 1 cup shredded cheddar cheese over the egg layer.
  8. Add the remaining tater tots on top, then pour over the remaining egg mixture.
  9. Finish with the last cup of shredded cheddar cheese evenly spread on top.
  10. Place the casserole in the oven and bake for 45–50 minutes until the top is golden brown and crispy and the eggs are set but still moist. Test doneness by inserting a knife in the center; it should come out clean.
  11. Let the casserole rest for 5–10 minutes before slicing.
  12. Sprinkle with chopped fresh chives or parsley for garnish.
  13. Cut into squares and serve warm.

Notes

If the top browns too quickly, tent with foil halfway through baking. For frozen tater tots, pre-bake for 5 minutes to help crisp. Use softened cream cheese to avoid lumps. Let casserole rest before slicing for easier serving. Rotate casserole halfway through baking if oven heats unevenly.
