  • 6 large eggs, room temperature
  • 1 ½ cups shredded Swiss cheese (Emmental or Gruyère recommended)
  • 6 slices bacon, cooked and chopped
  • 1 cup heavy cream
  • ½ cup whole milk
  • ½ teaspoon salt
  • ¼ teaspoon freshly ground black pepper
  • a pinch of ground nutmeg
  • butter for greasing the baking dish

Instructions

  1. Cook 6 slices of bacon in a frying pan over medium heat until crisp, about 7–10 minutes. Drain on paper towels and chop into small pieces.
  2. Preheat the oven to 350°F (175°C).
  3. Grease a 9-inch pie dish with about 1 tablespoon of butter.
  4. Shred 1 ½ cups of Swiss cheese using a cheese grater.
  5. In a large bowl, whisk together 6 large eggs, 1 cup heavy cream, and ½ cup whole milk until fully blended and slightly frothy, about 1 minute.
  6. Add ½ teaspoon salt, ¼ teaspoon freshly ground black pepper, and a pinch of ground nutmeg to the custard mixture and whisk again.
  7. Spread the chopped bacon evenly in the bottom of the prepared dish. Sprinkle the shredded Swiss cheese over the bacon.
  8. Pour the egg and cream mixture over the bacon and cheese, tilting the dish to distribute evenly.
  9. Bake in the preheated oven for 35–40 minutes, until the edges are set and the center is slightly jiggly. A toothpick inserted should come out mostly clean with a few moist crumbs.
  10. Let the quiche rest for 10 minutes before slicing and serving.

Notes

Do not overbeat the eggs to avoid a spongy texture. Use freshly grated Swiss cheese for better melting and creaminess. Let the quiche rest before slicing for cleaner cuts. If the top browns too quickly, cover loosely with foil halfway through baking. Room temperature eggs help the custard blend and bake evenly.
