  • 2 tablespoons Dijon mustard
  • 1 tablespoon honey
  • 1 teaspoon apple cider vinegar (optional)
  • Pinch of salt and pepper
  • Optional add-ins:
  • Fresh herbs like thyme or rosemary, chopped
  • Spicy mustard
  • Spinach leaves or thinly sliced bell peppers

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a small bowl, whisk together Dijon mustard, honey, apple cider vinegar (if using), salt, and pepper to make the honey mustard sauce. Set aside.
  3. On a lightly floured surface, gently roll each puff pastry sheet to smooth creases and slightly enlarge to about 12×12 inches.
  4. Brush each pastry sheet with melted butter.
  5. Layer the ham evenly over each pastry sheet, leaving about a 1-inch border on all sides. Add optional herbs or spinach if desired.
  6. Sprinkle shredded cheese evenly over the ham.
  7. Starting from one edge, carefully roll the pastry into a tight log, pressing the border to seal.
  8. Slice the roll into 1-inch thick pinwheels using a sharp knife or pizza cutter.
  9. Place the pinwheels cut-side up on a parchment-lined baking sheet, spacing about 1 inch apart.
  10. Brush the tops with a little more melted butter.
  11. Bake for 15-18 minutes, or until the pastry is puffed, golden brown, and the cheese is bubbly.
  12. Remove from oven and let cool slightly before serving.
