  • 4 ears fresh corn on the cob, husked and cut into 45 ribs each
  • 2 tablespoons honey
  • 1 tablespoon Old Bay seasoning
  • 4 tablespoons unsalted butter, softened
  • 2 tablespoons mayonnaise
  • 1 teaspoon freshly squeezed lemon juice
  • ½ teaspoon garlic powder
  • Salt and black pepper to taste
  • Optional garnish: fresh parsley or chives, finely chopped

Instructions

  1. Preheat your oven to 425°F (220°C) or prepare your grill for medium-high heat, about 400°F (204°C).
  2. Husk the corn, removing all silk. Using a sharp knife, cut each ear crosswise into 4 to 5 ribs, keeping each rib intact.
  3. In a mixing bowl, combine 2 tablespoons honey with 1 tablespoon Old Bay seasoning. Stir until well mixed. Warm honey slightly if too thick.
  4. Toss the corn ribs gently in the honey-Old Bay mixture, ensuring each rib is well coated. Arrange in a single layer on a baking sheet or grill rack.
  5. Roast or grill the corn ribs for 15-20 minutes, flipping halfway through, until edges are golden and caramelized and kernels are tender with a slight snap.
  6. While the corn cooks, mix softened butter, mayonnaise, lemon juice, garlic powder, salt, and pepper in a small bowl until smooth and creamy. Adjust seasoning to taste.
  7. Remove corn ribs from heat and let cool for a minute. Serve warm with the creamy butter dip. Garnish with fresh parsley or chives if desired.

Warm the honey slightly to help it blend with the Old Bay seasoning. Flip corn ribs often when grilling to prevent burning due to honey’s sugars. Use room temperature butter for a smooth dip.
