Ingredients

Scale
  • 1 can (16 oz / 450 g) refried beans
  • 1 teaspoon taco seasoning
  • 1 cup (240 g) sour cream (full-fat recommended)
  • ½ cup (120 g) mayonnaise (optional)
  • 1 teaspoon lime juice (freshly squeezed)
  • 1 cup (100 g) shredded sharp cheddar cheese
  • ½ cup (50 g) shredded Monterey Jack cheese
  • 1 cup (240 g) fresh salsa or pico de gallo
  • ¼ cup (40 g) sliced black olives
  • 2 green onions, thinly sliced
  • Fresh cilantro leaves for garnish (optional)
  • 2 ripe avocados, peeled and pitted
  • 1 small tomato, finely diced (optional)
  • 1 small jalapeño, seeded and minced (adjust to taste)
  • 1 tablespoon fresh lime juice
  • Salt and pepper to taste
  • 2 tablespoons finely chopped red onion

Instructions

  1. Prepare the Base Layer: In a bowl, mix the refried beans with taco seasoning until well combined. Spread this evenly into the bottom of your serving dish. (About 5 minutes)
  2. Make the Creamy Layer: In a separate bowl, stir together sour cream, mayonnaise (if using), and lime juice. Spread gently over the bean layer, smoothing it out with a spatula. (5 minutes)
  3. Add the Cheese: Sprinkle shredded cheddar and Monterey Jack evenly over the creamy layer. (2 minutes)
  4. Top with Salsa and Veggies: Spoon fresh salsa or pico de gallo over the cheese. Scatter sliced black olives and green onions on top. (3 minutes)
  5. Prepare Fresh Guacamole: Mash avocados in a bowl until creamy but still a bit chunky. Stir in diced tomato, jalapeño, lime juice, red onion, salt, and pepper. Taste and adjust seasoning. (7 minutes)
  6. Finish the Dip: Spoon the guacamole gently over the top of the layered dip, spreading evenly. Garnish with fresh cilantro leaves if desired. (2 minutes)
  7. Chill and Serve: Cover the dip with plastic wrap and refrigerate for at least 30 minutes to let the flavors meld. (Optional)

Notes

Do not mix layers to maintain visual appeal. Microwave refried beans for 20-30 seconds if too thick to spread. Use ripe but firm avocados for best guacamole texture. Drain salsa well to avoid soggy dip. Prepare a few hours ahead for flavors to meld and prevent guacamole browning. Lime juice in guacamole slows browning and adds brightness. Variations include using black beans, adding jalapeños to sour cream, or swapping tomato for roasted corn.
