Instructions

  1. Beat the eggs: Crack 2 large eggs into a bowl. Add 1 tablespoon of milk and a pinch of salt and pepper. Whisk gently until smooth and slightly frothy (1-2 minutes).
  2. Heat the pan: Place a non-stick skillet over medium-low heat and add 1 tablespoon of butter. Let it melt slowly, coating the bottom evenly.
  3. Cook the eggs: Pour the egg mixture into the pan. Let sit undisturbed for about 20 seconds until edges start to set. Gently stir and fold the eggs slowly to create soft curds, about 2-3 minutes.
  4. Add cheese: When eggs are about 90% cooked but still slightly wet, lay cheese slices on top. Cover the pan with a lid or plate to melt cheese for about 1 minute.
  5. Toast the bread: While cheese melts, toast bread slices in a toaster or butter each side and toast in another pan over medium heat until golden and crispy, about 2 minutes per side.
  6. Assemble the sandwich: Slide cheesy eggs onto one slice of toasted bread. Add optional toppings like spinach or tomato, then top with the second slice of bread.
  7. Serve immediately: Best served fresh and warm. Cut in half if desired.

Notes

Cook eggs over medium-low heat to keep them tender and fluffy. Use a lid to melt cheese gently without drying eggs. Buttering the bread before toasting adds extra flavor and crispness. Slightly day-old bread toasts better without sogginess.
