  • 1 cup (240ml) warm whole milk (about 110°F / 43°C)
  • ¼ cup (85g) honey
  • 6 tbsp (85g) unsalted butter, softened
  • 2 large eggs, room temperature
  • 1 tsp salt
  • 2 tbsp granulated sugar

Instructions

  1. Activate the yeast: In a small bowl, combine warm milk (1 cup / 240ml) with 1 tbsp honey and active dry yeast (2 ¼ tsp). Stir gently and let sit for 5-10 minutes until frothy and bubbly.
  2. Mix the dry ingredients: In a large bowl or stand mixer, whisk together all-purpose flour (3 ½ cups / 440g), sugar (2 tbsp), and salt (1 tsp).
  3. Add wet ingredients: Once yeast mixture is foamy, add it to the flour mixture along with softened unsalted butter (6 tbsp / 85g) and eggs (2, room temperature). Use dough hook on low speed if using a stand mixer.
  4. Knead the dough: Knead for 8-10 minutes until dough is smooth, elastic, and slightly tacky but not sticky. Add flour a tablespoon at a time if dough sticks.
  5. First rise: Lightly oil a large bowl, place dough inside, turning once to coat. Cover with kitchen towel or plastic wrap and let rise in a warm spot for 1 to 1 ½ hours until doubled in size.
  6. Shape the rolls: Punch down dough, divide into 12 equal portions (~60g / 2 oz each). Shape each into a smooth ball and place close together in a greased 9×13-inch pan.
  7. Second rise: Cover pan with towel and let rolls rise again for 30-45 minutes until puffy and almost doubled.
  8. Bake: Preheat oven to 375°F (190°C). Bake rolls on center rack for 18-22 minutes until golden brown and cooked through (internal temp ~190°F / 88°C).
  9. Honey butter glaze: Melt 2 tbsp unsalted butter and mix with 2 tbsp honey. Brush glaze generously on warm rolls immediately after baking.
  10. Cool and serve: Let rolls cool for 10 minutes in pan, then serve warm.

Notes

Use warm milk at about 110°F to activate yeast properly. Knead dough thoroughly for best texture. Seal seams underneath rolls to keep shape. Brush honey butter glaze while rolls are hot for shine and moisture. For dairy-free, substitute butter and milk with plant-based alternatives. Rolls can be frozen after first rise and baked later.
