A quick, easy, and healthy frozen yogurt bark featuring creamy Greek yogurt, fresh berries, and crunchy toasted almonds. Perfect for a refreshing snack or light dessert.

  • 2 cups Greek yogurt (plain or vanilla)
  • 2 tablespoons honey or maple syrup
  • 1 cup mixed fresh berries (blueberries, raspberries, sliced strawberries)
  • 1/3 cup toasted almonds (sliced or slivered)
  • 1 teaspoon vanilla extract (optional)
  • 1 teaspoon lemon zest (optional)

Instructions

  1. Toast the almonds in a dry skillet over medium heat for 3-5 minutes until golden and fragrant. Remove from heat and let cool.
  2. In a medium bowl, mix Greek yogurt with honey or maple syrup and vanilla extract if using until smooth.
  3. Line a 9×13 inch baking sheet with parchment paper or a silicone baking mat.
  4. Spread the sweetened yogurt evenly on the lined tray to about 1/4-inch thickness.
  5. Scatter mixed berries evenly over the yogurt surface.
  6. Sprinkle toasted almonds on top, pressing gently into the yogurt.
  7. Optionally, sprinkle lemon zest over the top.
  8. Freeze the tray for at least 4 hours or until completely firm.
  9. Remove the frozen bark from the tray using the parchment edges and break into pieces.
  10. Serve immediately or store in an airtight container in the freezer for up to 2 weeks.

Notes

Use thick Greek yogurt for best texture; strain if runny. Toast almonds carefully to avoid burning. Spread yogurt evenly for uniform freezing. Pat berries dry if very juicy to prevent soggy bark. Breaking bark by hand gives a rustic look and avoids cracking.
