  • 2 lemons, juiced and zested
  • 2 tablespoons chopped fresh parsley
  • 2 tablespoons chopped fresh thyme
  • 3 cloves garlic, minced
  • 3 tablespoons extra virgin olive oil
  • 1 teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper
  • Optional: pinch of red pepper flakes
  • Optional: 1 teaspoon honey

Instructions

  1. Prep the Marinade (10 minutes): In a medium bowl, whisk together the juice and zest of 2 lemons, chopped parsley and thyme, minced garlic, olive oil, salt, and pepper. If using, add red pepper flakes or honey.
  2. Marinate the Chicken (at least 30 minutes, up to 2 hours): Place the chicken breasts in a zip-top bag or shallow dish and pour the marinade over them. Massage the marinade into the chicken to coat every surface. Seal and refrigerate.
  3. Preheat the Grill (5-10 minutes): Light your grill to medium-high heat, aiming for about 375–400°F (190–204°C). Oil the grates lightly to prevent sticking.
  4. Grill the Chicken (12-15 minutes): Remove chicken from marinade and let excess drip off. Place on the grill and cook for 6-7 minutes per side, flipping once. Use tongs to avoid piercing the meat. Check internal temperature reaches 165°F (74°C).
  5. Rest the Chicken (5 minutes): Transfer the chicken to a plate and cover loosely with foil. Resting lets juices redistribute.
  6. Serve: Slice against the grain and garnish with extra fresh herbs or lemon wedges if desired.

Notes

Marinate chicken for at least 30 minutes but no longer than 2 hours to avoid mushy texture. Let chicken come to room temperature before grilling for even cooking. Use a meat thermometer to ensure internal temperature reaches 165°F (74°C). Rest chicken for 5 minutes before slicing to keep it juicy. Rotate chicken on grill to avoid hot spots and flare-ups.
