  • 1 cup honey
  • 3/4 cup light brown sugar, packed
  • 2 tbsp Dijon mustard
  • 2 tbsp apple cider vinegar
  • 1 tsp ground cinnamon
  • 1/2 tsp ground cloves (optional)
  • 1/2 tsp freshly cracked black pepper
  • 1/4 tsp ground ginger (optional)
  • 1 can (20 oz) pineapple rings, drained (reserve juice)
  • 2 tbsp unsalted butter, melted
  • 2 tbsp brown sugar
  • Maraschino cherries (optional)
  • Fresh parsley, chopped (optional, for garnish)
  • Extra pineapple juice for basting or serving (optional)

Instructions

  1. Preheat oven to 325°F (165°C). Remove ham from packaging and discard any plastic disk on the bone. Pat dry and place cut-side down on a rack in a large roasting pan.
  2. Score the surface of the ham in a diagonal crisscross pattern about 1/2-inch deep.
  3. In a small saucepan, combine honey, brown sugar, Dijon mustard, apple cider vinegar, cinnamon, cloves, pepper, and ginger. Simmer over medium heat, stirring until sugar dissolves (2–3 minutes). Remove from heat. Set aside 1/4 cup glaze for serving if desired.
  4. Brush half the glaze over the scored ham, letting it seep into the cuts. Tent loosely with foil and bake for 1 1/2 hours, basting with pan juices every 30 minutes.
  5. While ham bakes, toss pineapple rings with melted butter and brown sugar.
  6. About 45 minutes before ham is done, arrange pineapple rings over and around the ham, pressing gently to stick (secure with toothpicks if needed). Place a maraschino cherry in each ring if desired.
  7. Brush ham and pineapple rings generously with remaining glaze. Increase oven temperature to 400°F (205°C) for the last 20–25 minutes, uncover, and bake until ham is glossy, pineapple is caramelized, and glaze is bubbling. Watch closely to prevent burning.
  8. Remove ham from oven and let rest, tented with foil, for 15–20 minutes.
  9. Transfer pineapple rings to a platter or arrange on top for presentation. Slice ham across the grain and serve with extra glaze and pineapple rings.

Notes

Score the ham for better glaze absorption. Baste every 30 minutes for moist results. Use pineapple juice in the glaze or for basting to enhance flavor. Tent with foil if browning too quickly. Let ham rest before slicing for juicier meat. Fresh pineapple can be substituted for canned. For a spicy twist, add chipotle or sriracha to the glaze.
