Peeps S’mores Bark is a cheerful, easy spring treat featuring layers of melted chocolate, crunchy graham crackers, gooey marshmallows, and colorful Peeps. Perfect for parties, gifting, or family snacking, this nostalgic dessert comes together in under 30 minutes and is endlessly customizable.

Ingredients

Scale
  • 12 oz semisweet or milk chocolate chips
  • 6 oz white chocolate chips (optional, for drizzle)
  • 68 sheets graham crackers (about 3.2 oz), broken into bite-sized pieces
  • 1/2 cup mini marshmallows
  • 1215 Peeps Marshmallow Chicks or Bunnies (any color, sliced in half if needed)
  • 1/4 cup pastel candy-coated chocolate eggs (optional)
  • 12 tablespoons rainbow sprinkles (optional)
  • Flaky sea salt (just a pinch, optional)

Instructions

  1. Line a 9×13-inch baking sheet with parchment paper or a silicone mat.
  2. In a microwave-safe bowl, melt 12 oz chocolate chips in 30-second intervals, stirring between each, until smooth and glossy (about 1.5–2 minutes).
  3. Pour melted chocolate onto the prepared baking sheet and spread into an even 1/4-inch thick layer.
  4. Scatter broken graham crackers and mini marshmallows over the melted chocolate. Press gently to adhere. Add candy eggs or sprinkles if desired.
  5. Nestle Peeps into the surface while chocolate is still soft, pressing lightly so they stick.
  6. Melt 6 oz white chocolate chips (if using) and drizzle over the bark for decoration.
  7. Chill the tray in the fridge for 20–30 minutes, or until chocolate is fully set.
  8. Lift bark out using parchment paper and break or cut into rustic shards.
  9. Store pieces in an airtight container at room temperature for up to 3 days, or in the fridge for up to a week. Serve on a platter or package for gifting.

Notes

Use high-quality chocolate for best results. For gluten-free, swap graham crackers for a GF brand. For dairy-free, use vegan chocolate and marshmallows. Add a pinch of sea salt to balance sweetness. Bark is rustic—embrace imperfections! Kids love decorating with sprinkles and Peeps. Store in fridge for firmer texture, or freeze for up to a month.
