Perfect Honey Glazed Ham Recipe with Pineapple and Cloves

A quick and easy honey glazed ham with pineapple and cloves that creates a beautiful caramelized crust and festive aroma, perfect for celebrations and family gatherings.

  • 8 to 10 pounds bone-in fully cooked ham (preferably spiral sliced)
  • ½ cup (120 ml) honey (raw or wildflower)
  • ½ cup (100 g) dark brown sugar
  • 1 can pineapple rings (about 8 rings) or fresh pineapple rings
  • 20 to 25 whole cloves
  • 2 tablespoons (30 ml) Dijon mustard
  • 1 teaspoon (2 g) ground cinnamon (optional)
  • ½ teaspoon (1 g) ground black pepper
  • ½ cup (120 ml) orange juice (freshly squeezed preferred)

Instructions

  1. Preheat your oven to 325°F (163°C). Position a rack in the middle for even heat circulation.
  2. Remove packaging and pat the ham dry with paper towels. Score the skin in a diamond pattern about ½ inch apart, cutting through the fat but not into the meat.
  3. Press 4-5 whole cloves evenly into each pineapple ring and set aside.
  4. Place the ham cut-side down on a roasting rack inside a roasting pan.
  5. In a small bowl, combine honey, brown sugar, Dijon mustard, orange juice, ground cinnamon, and black pepper. Stir until smooth. Reserve about ¼ cup (60 ml) for basting later.
  6. Brush the ham generously with half of the glaze, making sure to get into the scored cuts. Cover loosely with aluminum foil.
  7. Roast the ham for about 1 hour and 15 minutes, basting every 20 minutes with the remaining glaze.
  8. During the last 15 minutes, remove the foil, arrange the pineapple rings on top of the ham, and brush with the reserved glaze to caramelize.
  9. Check that the internal temperature reaches 140°F (60°C) to ensure the ham is heated through.
  10. Remove the ham from the oven, tent with foil, and let rest for 15 minutes before slicing.

Notes

Baste the ham every 20 minutes and add pineapple rings only in the last 15 minutes to prevent burning the glaze. Let the ham rest after roasting to redistribute juices. Use a digital meat thermometer to avoid overcooking. Substitute maple syrup for honey for a vegan-friendly glaze and smoked tofu or seitan for a plant-based version.
