  • 1 cup fresh lemon juice (about 45 medium lemons, juiced)
  • 1 cup honey (or pure maple syrup for a vegan option)
  • 5 cups cold water
  • 2 tablespoons dried culinary lavender buds (food-grade)
  • Ice cubes
  • Lemon slices and fresh lavender sprigs (optional, for garnish)

Instructions

  1. Steep the lavender: In a small saucepan, bring 2 cups (480 ml) of water to a gentle boil. Remove from heat and add 2 tablespoons of dried culinary lavender buds. Cover and steep for about 10 minutes.
  2. Strain the lavender infusion: Using a fine mesh strainer or cheesecloth, strain the lavender water into a large pitcher. Press gently on the buds to extract the liquid and discard the buds.
  3. Sweeten the infusion: While the lavender water is still warm, stir in 1 cup (240 ml) of honey until fully dissolved. Let the mixture cool to room temperature (about 15-20 minutes).
  4. Juice the lemons: Juice about 4-5 medium lemons to yield 1 cup (240 ml) of fresh lemon juice. Strain out seeds but keep pulp if desired.
  5. Combine and chill: Once the lavender-honey water is cooled, stir in the fresh lemon juice and 3 cups (720 ml) of cold water. Stir and adjust sweetness or tartness by adding more water or honey if needed.
  6. Serve: Fill glasses with ice cubes, pour the lavender lemonade over, and garnish with lemon slices and fresh lavender sprigs if desired.

Notes

Do not oversteep lavender to avoid bitterness; steep for about 10 minutes. Use fresh lemons for best flavor. Sweeten while the lavender water is warm to dissolve honey fully. Adjust sweetness and tartness to taste. Chill before serving for best flavor. Store refrigerated up to 3 days and stir before serving.
