A simple and comforting crockpot recipe featuring tender chicken thighs coated in a sticky, sweet, and savory honey garlic glaze. Perfect for easy weeknight meals with minimal prep.

  • 2 pounds boneless, skinless chicken thighs
  • ⅓ cup (113g) honey
  • ¼ cup (60ml) low-sodium soy sauce
  • 4 cloves garlic, minced
  • 2 tablespoons (30ml) rice vinegar
  • 2 tablespoons (30g) ketchup
  • ¼ cup (60ml) water
  • 1 tablespoon (8g) cornstarch
  • ½ teaspoon ground black pepper
  • 1 teaspoon sesame seeds (optional)
  • Thinly sliced green onions (optional)

Instructions

  1. Rinse and pat dry 2 pounds of boneless, skinless chicken thighs. Trim any excess fat.
  2. In a medium bowl, whisk together honey, soy sauce, minced garlic, rice vinegar, ketchup, water, and ground black pepper until smooth and pourable.
  3. Optional: Heat a skillet over medium-high heat and sear chicken thighs for 2-3 minutes per side until golden for extra flavor.
  4. Place chicken thighs in the crockpot in a single layer if possible. Pour the honey garlic sauce evenly over the chicken.
  5. Cover and cook on low for 4-5 hours or on high for 2-3 hours until chicken is tender and easily shredded with a fork.
  6. About 15 minutes before serving, mix cornstarch with 2 tablespoons cold water to make a slurry.
  7. Remove chicken from crockpot and set aside. Stir cornstarch slurry into the sauce in the crockpot, cover, and cook on high for 10-15 minutes until sauce thickens to a sticky glaze consistency.
  8. Return chicken to the crockpot and gently toss to coat evenly with the thickened sauce.
  9. Garnish with sesame seeds and sliced green onions if desired. Serve hot over steamed rice or your favorite side.

Notes

Optional browning of chicken adds depth but is not required. Use tamari instead of soy sauce for gluten-free. Add extra garlic cloves for stronger garlic flavor. Use slow and low cooking for best tenderness. Use a slow cooker liner to ease cleanup. If sauce isn’t thick enough, add more cornstarch slurry carefully to avoid gluey texture.
