  • 3/4 cup (75 g) unsweetened cocoa powder
  • 1 1/2 tsp baking powder
  • 1 1/2 tsp baking soda
  • 1/2 tsp salt
  • 2 cups (400 g) granulated sugar
  • 2 large eggs, room temperature
  • 1 cup (240 ml) buttermilk (or milk + 1 tbsp lemon juice)
  • 1/2 cup (120 ml) vegetable oil
  • 1 cup (240 ml) strong brewed coffee, cooled
  • 2 tsp pure vanilla extract
  • 2 cups (480 ml) heavy cream
  • 16 oz (450 g) bittersweet chocolate, chopped
  • 2 tbsp (28 g) unsalted butter, room temperature
  • Pinch of salt

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour two 9-inch (23 cm) round cake pans and line bottoms with parchment paper.
  2. In a large bowl, sift together flour, cocoa powder, baking powder, baking soda, and salt. Whisk to combine evenly.
  3. In another bowl, whisk together sugar, eggs, buttermilk, vegetable oil, cooled coffee, and vanilla extract until smooth and glossy.
  4. Gradually fold dry ingredients into wet mixture with a rubber spatula until just combined. Batter will be thin but smooth.
  5. Divide batter evenly between prepared pans. Bake 30-35 minutes or until a toothpick inserted in center comes out clean or with a few moist crumbs.
  6. Cool cakes in pans for 10 minutes, then invert onto wire racks, remove parchment, and cool completely.
  7. To make ganache, place chopped chocolate in heatproof bowl. Heat heavy cream until simmering and pour over chocolate. Let sit 2 minutes, then stir until smooth.
  8. Add butter and pinch of salt to ganache, stir until glossy. Cool about 10 minutes until thick but spreadable.
  9. Place one cake layer on serving plate. Spread thick layer of ganache over top. Add second cake layer and cover entire cake with remaining ganache, smoothing sides and top.
  10. Let cake sit at room temperature for 30 minutes before slicing to soften ganache. Serve and enjoy.

Notes

Use strong brewed coffee cooled to room temperature to enhance chocolate flavor without coffee taste. Avoid overmixing batter to keep cake tender. Let ganache cool to spreadable consistency before applying. Chill cake briefly if needed to set ganache. For dairy-free ganache, substitute heavy cream with coconut cream and use dairy-free chocolate chips.
