  • 1 cup (240ml) boiling water
  • 1 cup (240ml) buttermilk, room temperature (or whole milk with 1 tablespoon lemon juice)
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • For the glaze:
  • 1/2 cup (1 stick, 113g) unsalted butter, cut into pieces
  • 1/4 cup (22g) unsweetened cocoa powder
  • 1/4 cup (60ml) milk (whole milk preferred)
  • 3 cups (360g) powdered sugar, sifted
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13-inch (23x33cm) sheet pan with butter or non-stick spray.
  2. In a large bowl, whisk together flour, granulated sugar, cocoa powder, baking soda, and salt until no clumps remain.
  3. In a medium saucepan, bring butter and boiling water to a full boil. Immediately pour over dry ingredients and stir quickly to combine; batter will be thin.
  4. Stir in buttermilk, eggs, and vanilla extract until smooth and fully combined. Do not overmix.
  5. Pour batter into prepared pan and spread evenly with a spatula. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean and edges start pulling away.
  6. While cake bakes, prepare glaze: melt butter in the same saucepan over medium heat. Whisk in cocoa powder and milk until smooth and glossy. Remove from heat and gradually whisk in powdered sugar until thick but pourable. Stir in vanilla extract.
  7. Pour glaze over warm cake immediately after baking. Spread evenly if needed. Let cake cool completely on a wire rack before slicing.
