  • 2 teaspoons ground cinnamon

  • 1 1/2 cups (about 2 medium) fresh zucchini, grated and squeezed dry
  • 3/4 cup (130g) semi-sweet or milk chocolate chips
  • Cinnamon Swirl Mixture: 1/4 cup (50g) brown sugar, 1 tablespoon ground cinnamon, 1 tablespoon melted butter

Instructions

  1. Brown the butter in a light-colored skillet over medium heat, stirring often until golden and fragrant (about 5 minutes). Remove from heat and let cool slightly.
  2. Preheat oven to 350°F (175°C). Grease or line a 9×5-inch loaf pan with parchment paper.
  3. In a large bowl, whisk together browned butter, granulated sugar, brown sugar, and eggs. Stir in vanilla extract until smooth.
  4. In another bowl, sift together flour, baking soda, salt, and 2 teaspoons ground cinnamon.
  5. Grate zucchini finely and squeeze out excess moisture using a clean kitchen towel.
  6. Gradually fold dry ingredients into wet ingredients until no flour streaks remain. Fold in grated zucchini and 3/4 cup chocolate chips, reserving a few for topping.
  7. Mix the cinnamon swirl mixture ingredients until crumbly.
  8. Pour half the batter into the loaf pan. Sprinkle half the cinnamon swirl mixture evenly. Add remaining batter, then top with remaining cinnamon swirl and reserved chocolate chips.
  9. Use a butter knife or skewer to gently swirl the cinnamon mixture into the batter to create a marbled effect.
  10. Bake for 50-60 minutes, checking doneness with a toothpick (should come out with a few moist crumbs).
  11. Cool in the pan for 15 minutes, then transfer to a wire rack to cool completely.
