  • 1/2 cup shredded cheddar cheese

  • 2 tablespoons mayonnaise
  • 4 large flour tortillas (10-inch size)
  • 1/2 cup sour cream
  • 1/4 cup crumbled blue cheese
  • 1 tablespoon milk
  • 1 teaspoon lemon juice
  • Salt and freshly ground black pepper, to taste

Instructions

  1. In a medium bowl, combine shredded chicken, buffalo wing sauce, mayonnaise, shredded cheddar, and green onions. Mix well until evenly coated; filling should be moist but not soggy.
  2. Place each flour tortilla flat on a clean surface. Warm slightly in the microwave for about 10 seconds to make rolling easier.
  3. Evenly spread the buffalo chicken mixture across each tortilla, leaving about 1 inch clear on one edge to help seal the roll.
  4. Starting from one side, tightly roll each tortilla into a log shape. Wrap each roll in plastic wrap or parchment paper and refrigerate for at least 30 minutes to firm up.
  5. While pinwheels chill, combine sour cream, crumbled blue cheese, milk, lemon juice, salt, and pepper in a small bowl. Whisk until smooth but slightly chunky. Adjust seasoning to taste.
  6. Remove rolls from fridge and unwrap. Using a sharp serrated knife, slice each roll into 1-inch thick pinwheels. Press filling gently if it squeezes out.
  7. Arrange pinwheels on a platter and drizzle blue cheese sauce over the top or serve on the side for dipping. Garnish with extra chopped green onions or celery sticks if desired.
