  • 2 pounds (900g) ground beef (80/20 blend preferred)
  • 1 cup (120g) plain breadcrumbs
  • ½ cup (120ml) whole milk
  • 2 large eggs, lightly beaten
  • 1 medium yellow onion, grated (about ½ cup)
  • 3 cloves garlic, minced
  • 2 tablespoons Worcestershire sauce
  • ¼ cup (60ml) ketchup
  • 1 tablespoon Dijon mustard
  • 1 teaspoon salt
  • ½ teaspoon black pepper, freshly ground
  • ½ teaspoon dried thyme (optional)
  • ½ cup (120ml) ketchup (for glaze)
  • ¼ cup (50g) packed brown sugar (light or dark)
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon Worcestershire sauce (for glaze)
  • ½ teaspoon garlic powder

Instructions

  1. Preheat the oven to 350°F (175°C). Line a baking sheet with foil and place a 9×5-inch loaf pan on top.
  2. In a large mixing bowl, combine 1 cup breadcrumbs with ½ cup milk. Let sit for 5 minutes until absorbed.
  3. Grate the onion directly into the bowl with the breadcrumb mixture, including the juice.
  4. Add ground beef, beaten eggs, minced garlic, 2 tablespoons Worcestershire sauce, ¼ cup ketchup, Dijon mustard, salt, pepper, and dried thyme. Mix gently with your hands until just combined.
  5. Transfer the mixture to the loaf pan and press gently into an even shape without packing too tightly.
  6. In a small bowl, whisk together ½ cup ketchup, ¼ cup brown sugar, 1 tablespoon apple cider vinegar, 1 teaspoon Worcestershire sauce, and ½ teaspoon garlic powder until the sugar is mostly dissolved.
  7. Spread about half of the glaze evenly over the top of the meatloaf. Reserve the rest.
  8. Bake for 45 minutes at 350°F.
  9. Remove from the oven and spread the remaining glaze over the top. Return to the oven and bake for another 15-20 minutes.
  10. Check doneness with an instant-read thermometer inserted into the center; it should read 160°F (71°C).
  11. Let the meatloaf rest in the pan for 10 minutes before slicing into 1-inch thick pieces.

Notes

For the best texture, use 80/20 ground beef. Grate the onion instead of chopping to add moisture. Let the meatloaf rest for 10 minutes before slicing to keep it from falling apart. The glaze is applied in two layers to prevent burning and create a caramelized crust.
