  • 1/2 cup Greek yogurt (120g), plain or vanilla
  • 1 tablespoon maple syrup (15ml)
  • 1 teaspoon cinnamon
  • 1/2 teaspoon vanilla extract
  • 1 tablespoon chia seeds (optional)
  • Pinch of salt

Instructions

  1. Toast the pecans (optional but recommended): Heat a dry skillet over medium-low heat. Add pecans and toast for 3-4 minutes, stirring frequently until fragrant and lightly browned. Set aside to cool.
  2. Dice the apple: Wash and core the apple, then chop into small, bite-sized pieces (about 1/4-inch). Leaving the skin on adds color and texture.
  3. Combine dry ingredients: In a mixing bowl, stir together the rolled oats, quick oats, chia seeds (if using), cinnamon, and a pinch of salt.
  4. Add wet ingredients: Pour in the milk, Greek yogurt, vanilla extract, and maple syrup. Stir well to combine everything evenly.
  5. Fold in apple and pecans: Gently mix the diced apple and toasted pecans into the oat mixture.
  6. Divide into containers: Spoon the mixture evenly into two 16-ounce jars or containers. Screw on lids tightly.
  7. Refrigerate overnight: Let the oats soak in the fridge for at least 6 hours, preferably overnight.
  8. Serve: In the morning, give the oats a good stir. Add a splash of milk if you prefer a looser texture. Optionally top with extra chopped pecans, a drizzle of maple syrup, or a sprinkle of cinnamon.

Notes

Toast pecans gently to enhance flavor but watch closely to avoid burning. Stir oats before eating to re-incorporate any settled liquid. If oats are too thick in the morning, add a tablespoon or two of milk to loosen. Use lemon juice on apples if prepping more than a day ahead to prevent browning.
