  • 1 cup grated apple (about 1 medium apple), peeled or unpeeled
  • For the Walnut Streusel Topping:
  • 1/4 cup (57g) unsalted butter, melted
  • 1/3 cup (65g) brown sugar, packed
  • 1/2 cup (60g) all-purpose flour
  • 1/2 cup (60g) chopped walnuts, toasted
  • 1 teaspoon ground cinnamon
  • Pinch of salt

Instructions

  1. Brown the butter: Place 1/2 cup unsalted butter in a medium saucepan over medium heat. Stir frequently as it melts and foams. When it turns golden brown with a nutty aroma, remove from heat and let cool slightly.
  2. Prep zucchini and apple: Grate 1 1/2 cups zucchini and 1 cup apple. Place in a clean kitchen towel or cheesecloth and squeeze out excess moisture.
  3. Mix wet ingredients: In a large bowl, whisk together browned butter, granulated sugar, brown sugar, and eggs until smooth. Stir in vanilla extract.
  4. Combine dry ingredients: In a separate bowl, sift or whisk together flour, baking soda, baking powder, cinnamon, and salt.
  5. Mix batter: Gradually fold dry ingredients into wet mixture until just combined. Gently fold in grated zucchini and apple.
  6. Prepare walnut streusel: In a small bowl, combine melted butter, brown sugar, flour, cinnamon, salt, and toasted walnuts. Mix until crumbly.
  7. Assemble and bake: Preheat oven to 350°F (175°C). Pour batter into greased or parchment-lined 9×5-inch loaf pan. Evenly sprinkle walnut streusel on top. Bake for 60-70 minutes or until a toothpick inserted in the center comes out clean. Tent with foil halfway if streusel browns too quickly.
