  • 1/2 cup buttermilk, cold (or 1/2 cup milk plus 1 teaspoon vinegar)
  • 1 teaspoon vanilla extract (optional)
  • 2 tablespoons melted butter (for brushing)
  • 2 tablespoons brown sugar (for sprinkling on top)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, combine sliced peaches, brown sugar, lemon juice, bourbon, cinnamon, nutmeg, cornstarch, and a pinch of salt. Toss gently to coat evenly and let sit.
  3. Transfer the peach mixture to a 9×9-inch baking dish, spreading evenly.
  4. In another large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
  5. Add cold cubed butter to the flour mixture and cut in using a pastry cutter or two knives until mixture resembles coarse crumbs with pea-sized butter bits.
  6. In a small bowl, combine cold buttermilk and vanilla extract. Pour into flour mixture and stir gently until just combined with some lumps remaining.
  7. Drop spoonfuls of biscuit dough evenly over the peach filling, leaving gaps.
  8. Brush biscuit topping with melted butter and sprinkle with brown sugar.
  9. Bake for 35-40 minutes until biscuits are golden and peach filling is bubbling.
  10. Remove from oven and let cool slightly before serving.
