Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13-inch casserole dish with butter or non-stick spray.
  2. Place peeled and chopped sweet potatoes in a large pot, cover with cold water, add a pinch of salt, and bring to a boil. Simmer for about 20 minutes until tender when pierced with a fork.
  3. While the potatoes cook, heat a dry skillet over medium heat. Add chopped pecans and toast for 3-5 minutes, stirring frequently until fragrant and lightly browned. Be careful not to burn them.

  7. Transfer the mixture evenly to the prepared baking dish and smooth the top with a spatula. Sprinkle the remaining pecans over the surface.
  8. Generously scatter mini marshmallows across the top of the casserole.
  9. Bake for 25-30 minutes until the filling is set and marshmallows start to puff and brown.
  10. Switch oven to broil and toast marshmallows for 1-3 minutes until golden brown, keeping the oven door slightly open and watching closely to avoid burning.
