Cozy One-Pot Tuscan White Bean and Sausage Soup

A hearty and comforting one-pot soup featuring Italian sausage, cannellini beans, and kale, perfect for quick and nourishing weeknight meals.

  • 1 pound Italian sausage (spicy or mild), casings removed
  • 2 cans (15 oz each) cannellini beans, drained and rinsed
  • 4 cups chopped kale (about 120g), stems removed
  • 1 medium yellow onion, finely diced
  • 4 cloves garlic, minced
  • 4 cups low sodium chicken broth (1 liter)
  • 2 tablespoons extra virgin olive oil
  • 1/4 teaspoon crushed red pepper flakes (optional)
  • 1 teaspoon dried Italian herbs (basil, oregano, thyme mix)
  • Salt and pepper to taste
  • Freshly grated Parmesan cheese for serving (optional)

Instructions

  1. Dice the onion finely, mince the garlic, chop the kale leaves removing tough stems, and drain and rinse the beans. Prep should take about 10 minutes.
  2. Heat 2 tablespoons olive oil over medium heat in a large heavy-bottomed pot. Add the sausage, breaking it apart with a spoon, and brown for 7-8 minutes until cooked through.
  3. Add the diced onion to the pot with the sausage and cook until softened and translucent, about 5 minutes. Add minced garlic and red pepper flakes, cooking for another minute until fragrant.
  4. Sprinkle in dried Italian herbs, salt, and pepper. Pour in 4 cups chicken broth and stir, scraping browned bits from the pot. Bring to a gentle simmer, about 5 minutes.
  5. Stir in drained cannellini beans and chopped kale. Simmer uncovered for 10-15 minutes until kale is tender but still vibrant. Add more broth or water if soup thickens too much.
  6. Taste and adjust seasoning with salt and pepper. Serve hot with a generous sprinkle of freshly grated Parmesan cheese if desired.

Notes

Do not overcrowd the pot when browning sausage to ensure proper browning and flavor. Rinse canned beans to reduce canned taste. Add kale last to keep it vibrant and slightly crisp. Parmesan cheese adds a salty, nutty finish. For vegetarian version, substitute sausage with plant-based sausage and use vegetable broth.
