Instructions

  1. Cube about 10 cups (250g) of day-old brioche or challah bread into roughly 1-inch pieces.
  2. In a large bowl, whisk together 6 large eggs, 4 cups (960ml) eggnog, 1/2 cup (100g) granulated sugar, 2 teaspoons vanilla extract, 1 teaspoon ground cinnamon, 1/2 teaspoon freshly grated nutmeg, and a pinch of salt until smooth, about 1-2 minutes.
  3. Gently fold the cubed bread into the custard mixture, ensuring all pieces are coated but intact. Let sit for about 5 minutes to start soaking.
  4. Butter a 9×13-inch (23×33 cm) baking dish with 2 tablespoons melted butter. Transfer the soaked bread evenly into the dish, pressing down lightly.
  5. Cover the dish tightly with plastic wrap or foil and refrigerate for at least 6 hours or overnight.
  6. Preheat oven to 350°F (175°C). Remove the bake from the fridge and let sit at room temperature for 15 minutes.
  7. Bake uncovered for 45-50 minutes until the top is golden brown and a knife inserted in the center comes out clean. Tent with foil if browning too quickly after 30 minutes.
  8. While baking, combine 1 cup (240ml) maple syrup, 2 tablespoons bourbon, 1 tablespoon unsalted butter, and 1/4 teaspoon cinnamon (optional) in a small saucepan over medium-low heat. Stir until butter melts and syrup is warm but not boiling. Keep warm.
  9. Let the bake cool for 5 minutes before slicing. Serve warm drizzled generously with bourbon maple syrup.
