Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Peel the peaches using a paring knife or by blanching them in boiling water for 30 seconds to loosen the skin. Slice into ½-inch thick wedges.
  3. In a large bowl, combine sliced peaches, ½ cup granulated sugar, 2 tablespoons brown sugar, 1 teaspoon lemon juice, 1 teaspoon vanilla extract, ½ teaspoon cinnamon, and 2 teaspoons cornstarch. Toss gently and let sit for 5 minutes.
  4. Pour the peach mixture, including juices, into a 9×9-inch baking dish and spread evenly.
  5. In a separate bowl, whisk together 1 cup all-purpose flour, 1 cup granulated sugar, 1 tablespoon baking powder, and ¼ teaspoon salt. Slowly add 1 cup whole milk and 6 tablespoons melted butter, stirring until just combined.
  6. Pour the batter over the peach filling, spreading gently to cover but leaving some texture.
  7. Bake for 35-40 minutes until the topping is golden brown and a toothpick inserted in the biscuit layer comes out clean.
  8. Let the cobbler cool for 10 minutes to thicken.
