  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • about 1/2 cup granulated sugar for rolling
  • About 36 unwrapped Hershey Kisses (milk chocolate preferred)

Instructions

  1. Preheat your oven to 375°F (190°C). Line two baking sheets with parchment paper or silicone mats.
  2. Cream together the butter, peanut butter, granulated sugar, and brown sugar in a large bowl using an electric mixer on medium speed for 3-4 minutes until light and fluffy.
  3. Beat in the egg and vanilla extract until well combined.
  4. In a separate bowl, whisk together the all-purpose flour, baking soda, and salt.
  5. Slowly add the dry ingredients to the wet mixture and stir until just combined. Chill dough for 15 minutes if too sticky.
  6. Place granulated sugar for rolling in a small bowl. Form dough balls about 1 inch in diameter using a cookie scoop or spoon.
  7. Roll each dough ball in the sugar until fully coated.
  8. Arrange dough balls on prepared baking sheets about 2 inches apart.
  9. Bake for 8-10 minutes until edges are set but centers are still soft.
  10. Immediately press one Hershey Kiss into the center of each cookie as soon as they come out of the oven.
  11. Let cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

Notes

Press the Hershey Kiss into the cookie immediately after baking to prevent melting too much. Chill dough if too sticky. Rolling dough balls in sugar creates a crisp exterior. Avoid overbaking to keep cookies chewy. Dough can be refrigerated up to 24 hours before baking.
