A comforting stone fruit crisp featuring velvety peaches and tart blueberries under a golden oat topping, perfect for cozy evenings and seasonal gatherings.

Ingredients

Scale
  • 4 cups fresh peaches, peeled and sliced (about 45 medium peaches)
  • 1 1/2 cups fresh blueberries (or frozen, thawed, drained)
  • 1/3 cup granulated sugar (adjust to taste depending on fruit ripeness)
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon (optional)
  • 2 tablespoons cornstarch
  • 1 cup rolled oats (old-fashioned oats recommended)
  • 3/4 cup all-purpose flour (can swap half with almond flour for a nuttier flavor)
  • 1/2 cup packed light brown sugar
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon fine sea salt
  • 6 tablespoons unsalted butter, cold and cubed (use vegan butter for dairy-free)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine sliced peaches and blueberries. Add sugar, lemon juice, vanilla extract, cinnamon, and cornstarch. Toss gently but thoroughly so the fruit is evenly coated. Let sit for 10 minutes to thicken juices.
  3. In a separate bowl, mix rolled oats, flour, brown sugar, cinnamon, and salt. Add cold, cubed butter. Using a pastry cutter or fingertips, blend until mixture resembles coarse crumbs with pea-sized bits of butter.
  4. Pour the fruit filling into a 9×9 inch baking dish, spreading evenly. Sprinkle the oat topping over the fruit, covering completely but not packing down.
  5. Bake for 40-45 minutes until fruit bubbles around edges and topping is golden brown with toasted oat edges. Tent with foil if topping browns too quickly.
  6. Let the crisp rest for 15 minutes before serving to allow filling to thicken.

Notes

Keep butter cold to ensure a crisp topping. Avoid overmixing the topping to maintain crumbly texture. Use fresh, ripe stone fruits for best results. Let crisp rest before serving to thicken filling. Frozen fruit can be used if thawed and drained well. For gluten-free, use certified gluten-free oats or almond flour. For dairy-free, substitute butter with vegan butter or coconut oil.
