A quick and easy rustic side dish featuring creamy mashed potatoes infused with nutty brown butter and aromatic sage. Perfect for cozy dinners and crowd-pleasing meals.

  • 2 pounds Yukon Gold or Russet potatoes, peeled and cut into chunks
  • 6 tablespoons unsalted butter
  • 810 fresh sage leaves, washed and patted dry
  • ½ cup whole milk or cream, warmed
  • 1 clove garlic, minced (optional)
  • Salt to taste
  • Freshly ground black pepper to taste
  • Pinch of nutmeg (optional)
  • Splash of sour cream (optional)

Instructions

  1. Peel and cut potatoes into even chunks about 1 to 1.5 inches.
  2. Place potatoes in a large pot and cover with cold water by at least an inch. Add a pinch of salt.
  3. Bring water to a boil over high heat, then reduce to medium and simmer for 15-20 minutes until potatoes break apart easily.
  4. Drain potatoes in a colander, then return to the hot pot off the heat for 2 minutes to evaporate excess moisture.
  5. While potatoes cook, melt butter in a small skillet over medium heat. Swirl occasionally until butter foams and turns golden brown with a nutty aroma (about 4-5 minutes).
  6. Add sage leaves to the browned butter and crisp for 1-2 minutes. Remove from heat.
  7. Mash potatoes using a ricer or masher until mostly smooth but still a bit rustic.
  8. Stir in browned butter with crispy sage leaves, warmed milk or cream, and minced garlic if using.
  9. Season with salt and freshly ground black pepper to taste. Add nutmeg or sour cream if desired.
  10. Taste and adjust seasoning. Serve immediately.

Notes

Brown the butter carefully to avoid burning; swirl gently and watch for a nutty aroma. Warm the milk or cream before adding to keep the mash silky. Avoid over-mashing to prevent gluey texture. Rewarm browned butter gently if it solidifies before mixing.
