A creamy, spicy buffalo chicken dip with blue cheese, made effortlessly in the crockpot. Perfect for game day or casual gatherings, this dip combines tangy buffalo sauce with rich cheeses for a crowd-pleasing snack.

Ingredients

Scale
  • 3 cups shredded cooked chicken (rotisserie chicken recommended)
  • 8 oz cream cheese, softened (full-fat preferred)
  • 1/2 cup buffalo sauce (e.g., Frank’s RedHot)
  • 1/2 cup blue cheese crumbles
  • 1/2 cup sour cream (optional but recommended)
  • 1/4 cup ranch dressing
  • 1 cup shredded cheddar cheese
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste

Instructions

  1. If not using pre-cooked chicken, poach or roast about 2 large chicken breasts (12 oz) until cooked through, then shred with two forks (15-20 minutes).
  2. In a mixing bowl, combine softened cream cheese, sour cream, ranch dressing, garlic powder, onion powder, salt, and pepper. Mix until smooth and creamy (3-5 minutes).
  3. Stir in buffalo sauce, shredded cheddar cheese, and blue cheese crumbles until well combined.
  4. Fold in shredded chicken gently until evenly mixed.
  5. Lightly grease the crockpot insert and spoon in the mixture, smoothing the top.
  6. Set the crockpot to low and cook for 2 to 3 hours, stirring once halfway through to prevent burning and ensure even melting.
  7. After 2 hours, check the dip’s consistency; if too thick, add a splash of milk or more buffalo sauce to loosen.
  8. Once hot and bubbly, keep warm in the crockpot or serve immediately with dippers like celery sticks, tortilla chips, or sliced baguette.

Notes

Let cream cheese and sour cream come to room temperature before mixing to prevent lumps. Stir halfway through cooking to prevent sticking. For extra cheesy top, sprinkle cheddar or mozzarella in last 15 minutes uncovered. Can be baked at 350°F for 20 minutes as an alternative. Leftovers thicken in fridge; add milk or buffalo sauce when reheating to loosen. Use slow cooker liners for easy cleanup.
