  • 4 oz cream cheese, cubed
  • 1/2 cup sour cream or Greek yogurt

  • 3 cloves garlic, minced

  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil or butter
  • Optional: 1 jalapeño, finely diced
  • Fresh cilantro for garnish

Instructions

  1. Heat olive oil or butter in a skillet over medium heat. Add diced onion and minced garlic; cook for 3-4 minutes until softened and fragrant.
  2. Place chicken breasts or thighs at the bottom of the slow cooker. Add sautéed onion and garlic on top.
  3. Add white beans, diced green chilies, and corn kernels to the slow cooker.
  4. Sprinkle ground cumin, dried oregano, salt, and black pepper over the ingredients.
  5. Pour in chicken broth, ensuring ingredients are mostly covered.
  6. Cover and cook on low for 6-8 hours or on high for 3-4 hours until chicken is tender.
  7. Remove chicken and shred with two forks. Return shredded chicken to the slow cooker and stir gently.
  8. Add cubed cream cheese and stir until melted and incorporated.
  9. Fold in sour cream or Greek yogurt for extra creaminess. Add broth or water if chili is too thick.
  10. Adjust seasoning with salt, pepper, or jalapeño if desired. Warm through for another 10-15 minutes on low.
  11. Ladle chili into bowls and garnish with fresh cilantro, lime wedges, and shredded cheese if desired.
