  • 2 pounds Yukon Gold or red potatoes, scrubbed and cut into bite-sized chunks
  • 6 slices thick-cut bacon (Applewood smoked preferred)
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 3 tablespoons fresh dill, finely chopped
  • 2 tablespoons red onion, finely minced
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon Dijon mustard
  • 1 small clove garlic, minced (optional)
  • Salt and freshly cracked black pepper, to taste
  • 1 tablespoon fresh chives, chopped (optional, for garnish)

Instructions

  1. Place the chopped potatoes in a large pot and cover with cold water by about an inch. Add a pinch of salt.
  2. Bring to a boil over medium-high heat, then reduce to a gentle simmer. Cook for 12-15 minutes until potatoes are tender but not falling apart.
  3. Drain the potatoes in a colander and let them sit for a few minutes to steam off excess water.
  4. While still warm, transfer potatoes to a large mixing bowl.
  5. Heat a skillet over medium heat and cook bacon slices until crisp and browned on both sides, about 8-10 minutes.
  6. Transfer cooked bacon to a paper towel-lined plate to drain and cool, then crumble into bite-sized pieces.
  7. In a small bowl, whisk together mayonnaise, sour cream, chopped dill, minced garlic (if using), apple cider vinegar, Dijon mustard, salt, and pepper.
  8. Pour the dressing over the warm potatoes. Add minced red onion and gently fold to combine without mashing the potatoes.
  9. Add most of the crispy bacon to the salad and fold lightly to distribute. Reserve some bacon for topping before serving.
  10. Cover and refrigerate for at least 1 hour to let flavors meld.
  11. Before serving, garnish with remaining bacon and fresh chives.

Notes

Do not add bacon too early to keep it crispy. Let the salad chill for at least an hour to enhance flavors. Use Yukon Gold or red potatoes to avoid mushy texture. Start potatoes in cold water for even cooking. Adjust vinegar to brighten dressing if needed.
