Creamy Instant Pot Beef Stroganoff

A rich and tender beef stroganoff made quickly in the Instant Pot, delivering classic creamy comfort food in about 30 minutes.

  • 1 pound beef sirloin or stew meat, cut into bite-sized strips
  • 8 ounces cremini or white button mushrooms, sliced
  • 1 medium yellow onion, finely chopped
  • 2 cloves garlic, minced
  • 1 1/2 cups low-sodium beef broth
  • 1/2 cup full-fat sour cream
  • 2 tablespoons all-purpose flour
  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 1 teaspoon Worcestershire sauce (optional)
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste
  • Fresh parsley, chopped, for garnish
  • 8 ounces cooked egg noodles or rice, for serving

Instructions

  1. Pat the beef strips dry and season with salt and pepper. Set Instant Pot to ‘Sauté’ mode and heat olive oil and 1 tablespoon butter until shimmering.
  2. Add beef strips in batches and sear for 2-3 minutes per side until browned but not cooked through. Remove and set aside.
  3. Add remaining butter to the pot. Sauté chopped onion for 3-4 minutes until translucent. Add mushrooms and garlic, sauté for 4-5 minutes until mushrooms are browned and moisture evaporates.
  4. Pour in beef broth and scrape up browned bits to deglaze the pot.
  5. Return beef to the pot. Stir in Worcestershire sauce and Dijon mustard.
  6. Seal the Instant Pot lid and cook on high pressure for 10 minutes. Quick-release the pressure carefully.
  7. Mix flour with a few tablespoons of cold water to make a slurry. Set Instant Pot to ‘Sauté’ and stir slurry into the beef mixture. Cook 2-3 minutes until sauce thickens.
  8. Remove pot from heat and stir in sour cream until fully blended. Avoid boiling after adding sour cream.
  9. Serve stroganoff over cooked egg noodles or rice. Garnish with chopped fresh parsley.

Notes

Do not skip searing the beef to develop flavor. Deglaze the pot well to avoid burn errors. Stir sour cream in off heat to prevent curdling. Use quick release to avoid overcooking beef. For gluten-free, substitute flour with cornstarch or arrowroot powder. For dairy-free, use coconut cream and dairy-free butter or oil.
