  • 2 cups fresh blueberries
  • 1 package (about 9 oz) graham crackers
  • Optional garnishes: extra lemon zest or thin lemon slices, fresh mint leaves

Instructions

  1. In a medium bowl, beat the mascarpone cheese until smooth and creamy.
  2. In a separate chilled bowl, whip the heavy cream with the granulated sugar and vanilla extract until stiff peaks form (about 3-4 minutes).
  3. Gently fold the whipped cream into the mascarpone until just combined.
  4. Stir in the lemon zest and fresh lemon juice.
  5. Spread a thin layer of the cream mixture evenly on the bottom of an 8×8-inch dish.
  6. Lay graham crackers in a single layer over the cream, breaking pieces if needed to fit snugly.
  7. Spread about one-third of the cream mixture over the crackers.
  8. Scatter about half of the blueberries on top, gently pressing them into the cream.
  9. Add another layer of graham crackers, followed by another third of the cream mixture, and the remaining blueberries.
  10. Finish with a final layer of graham crackers and top with the remaining cream mixture, smoothing it evenly.
  11. Cover the dish tightly with plastic wrap and refrigerate for at least 4 hours, ideally overnight.
  12. Before serving, garnish with extra lemon zest or thin lemon slices and fresh mint leaves.
  13. Cut into squares with a sharp knife and serve with a wide spatula.

Notes

If graham crackers break apart when layering, moisten them slightly with lemon juice or water to help soften without crumbling. Do not skip chilling time as it is essential for the graham crackers to soften and the layers to set properly. Use cold cream for better whipping results. For dairy-free or gluten-free versions, substitute mascarpone with coconut cream and graham crackers with gluten-free crackers respectively.
