  • 1.5 pounds boneless, skinless chicken breasts, pounded slightly for even cooking
  • 1/3 cup oil-packed sun-dried tomatoes, chopped and drained
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup freshly grated parmesan cheese
  • 1/2 cup low sodium chicken broth
  • 1 teaspoon Italian seasoning (dried basil, oregano, thyme, rosemary mix)
  • 1/4 teaspoon red pepper flakes (optional)
  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Place chicken breasts between two sheets of plastic wrap or in a zip-top bag and gently pound to an even thickness of about 1/2 inch.
  2. Pat chicken dry and season both sides with salt, pepper, and half the Italian seasoning.
  3. Heat olive oil and 1 tablespoon butter in a large skillet over medium-high heat until shimmering.
  4. Add chicken breasts and cook undisturbed for 4-5 minutes until golden brown; flip and cook another 4 minutes. Remove chicken and set aside.
  5. Lower heat to medium. In the same pan, sauté minced garlic and chopped sun-dried tomatoes for 1-2 minutes until fragrant.
  6. Pour in chicken broth and scrape the pan to loosen browned bits. Simmer for 2 minutes to reduce slightly.
  7. Stir in heavy cream, parmesan cheese, remaining Italian seasoning, and red pepper flakes if using. Cook gently for 3-4 minutes until sauce thickens.
  8. Return chicken to the pan, spoon sauce over, cover, and simmer on low for 5 minutes or until chicken reaches 165°F internal temperature.
  9. Taste and adjust seasoning with salt and pepper. Add a splash of broth or cream if sauce is too thick.
  10. Serve chicken topped with creamy sun-dried tomato sauce. Garnish with fresh parsley if desired.

Notes

Use room temperature chicken for better browning. Do not rush searing to develop a golden crust. Keep heat moderate when adding cream and parmesan to avoid curdling. If sauce thickens too much, loosen with broth or cream. Leftovers reheat well with a splash of broth or cream. For dairy-free, substitute heavy cream with full-fat coconut milk and parmesan with nutritional yeast.
